Yosma

Yosma, a traditional Turkish restaurant, has just opened on Baker Street. Bringing the taste of the Middle East to Marylebone, the restaurant majors in grilled meats and features a Meyhane – that’s a Turkish bar with a focus on beer and wine. Yosma serves a versatile selection of all day food, ranging from shareable meze plates to main dishes with a focus on meat, cooked over coal.

It’s the passion project of executive chef Hus Vedat, of Turkish heritage, who recently launched Just Opened haunt of choice, Ceviche Old Street. Staying closer to his roots, Vedat’s dishes not to miss include Turkish dumpling stuffed with lamb neck (!), yoghurt sauce, chilli, oil and mint, and (rather tantalisingly…), a short rib featuring ‘caul’: the amniotic membrane surrounding a fetus!

Staying with the experimental theme, the cocktails are from the capital’s resident cocktail maestro Matt Whiley (Peg + Patriot). Whiley has concocted a menu of twists on Turkish classics, formed around traditional Turkish tipple, raki. Raki is mixed with ingredients like fennel pollen, parsley gin and cucumber dilution, which explains the aperitif’s unique taste. A range of traditional wines and Turkish beers also feature.

There are on-site coal pits where Vedat roasts lamb and cooks fish, delivered daily from Cornwall. While a meat heavy menu takes precedent, equally experimental vegetarian dishes feature. The Kirmizi Biber (coal roasted bell peppers with lime zest), the Kunefe (Kadoyif -strands of filo pastry- with white cheese and syrup), and the Pancar (pit roasted golden beetroot, garlic oil and dill) will turn heads.

Ultimately competing with its trendy neighbourhood, Yosma has a brasserie feel and luxurious fittings. They include floor-to-ceiling glass windows and a statement open kitchen. Elsewhere, the look is minimal, with dark hues, to place emphasis on the dishes, which are brighter and more colourful.
