Som Saa is preparing for another culinary adventure: it’s about to go from pop-up to permanent. The Thai restaurant was a surprise hit when it opened temporarily in Spitalfields last year, the product of a £700,000 crowdfunding campaign. Quickly, its three month set-up turned into a year’s residency. While the original menu focused on grilled food from Northern Thailand (Som Saa had only a grill!), the new restaurant is serving a wider range of regional Thai dishes.

So what’s new? A moodier, low-lit look, but otherwise, the owners have kept the successful formula the same, including the pop-up’s original open kitchen. Food focuses on a range of native curries and stir fries and plenty of ingredients are finished and prepared in house, including, brilliantly, the coconut milk. Confirmed dishes will be traditional and include pad chaa aharn talay (stir fry prawns, clams, limed squid and wild ginger) and pad grapow pbet (Stir fried duck with holy basil, chilliest and crispy duck egg over rice).

Passing by? Som Saa will soon offer a short and traditional bar snack menu including homemade Thai sausages, citrus cured fish, and parcels of palm sugar and peanuts wrapped in mustard green leaves. Leah Watts
