Sibarita is a bar serving wine, cheese and charcuterie sourced from around Spain and Catalunya, open in Covent Garden.

The opening is a collaboration between chef and restaurateur Victor Garvey and his father, who shared a dream to open a casual cheese and wine bar.

The Spot:

This is a prime spot in Covent Garden, close to Victor’s modern Spanish restaurant, Encant. It’s designed to be a really laid back place where anyone can drop in for a couple of glasses and a nibble.

The Food:

Cheese and charcuterie have been sourced from around Spain and Catalunya, so there’s Picos de Valdeon Azul, a blue cheese with a rich, buttery texture and several varieties of Jamon Iberico de Bellota, some of the finest cured ham in the world – in fact, it’s one of the world’s greatest foods, full stop.

There’s also a menu of tapas, including calamari, fried and served with Alegria pepper and toasted coriander, chicken with crispy Serrano ham and a gooey, baked Torta Del Casar cheese, served with crudités and garlic bread, for dipping.

Desserts include a cobbler made with cherries poached in Rioja and a caramelised brioche pudding with passion fruit sorbet.

The Drinks:

There’s a fantastic drinks list at Sibarita, including some top end Cava. This Spanish fizz has something of a bad rep but this is unfair as there are some stunning examples out there, many of them on this list. We’re going straight for the Gramona, Brut Nature (2011) which has a comparable complexity to a Champagne that would cost four times the price.

The rest of list is full of excellent regional Spanish wines, too – well worth exploring.

Cheese boards come in two sizes at £11 and £14 and that Iberico ham comes in at £17 per plate. Tapas will set you back £4-11. Drinks

In a Nutshell:

This is a casual bar right in the heart of Covent Garden serving carefully sourced cheese, charcuterie and wine, which will all be a pleasure to work through in the coming months.
