Sapling

Sapling is a wine-driven neighbourhood restaurant, now open in Dalston.

Founder Bob Ritchie developed a passion for wine and decided to join forces with the wonderfully-named sommelier Dan Whine to make his dream of a wine-focused restaurant happen. It’s sure to be a great addition to Dalston’s top bars and restaurants.

The Spot:

It’s a cosy, comfortable neighbourhood spot with some very covetable Foresso worktops, made with leftover pieces of marble used to build palazzos in 15th-Century Venice. You’ll be Googling them for your house before you know it.

The Food:

The Head Chef here is Jon Beeharry, who has previously worked at Bistroteque and Rita’s. He’s focused on creating a simple menu using great ingredients, designed to match the wine rather than vice versa, as is the norm. It’s basically dreamy bar food, so think snacks like oysters, pickles, smoked cod’s roe, langoustines and beef tartare, alongside a couple of more substantial dishes, including hake with a cockle and potato sauce.

There’s also a selection of cheese from La Fromagerie and charcuterie sourced by British cured meat specialists Cobble Lane Cured.

The Drinks:

There are a couple of lists here. The first is a ‘focus list’ of around 36 regularly changing wines from producers the guys at Sapling think are particularly great. This list will also feature grower Champagnes and sparklers.

The second option is to choose from the wider list of around 100 bottles, which you can also sample by the glass thanks to Coravin, a method which means wines can be poured by the glass without removing the cork from the bottle. This means they’ve got a more interesting selection of wines to offer by the glass as they don’t need to worry about opening a bottle that might not be finished right away.

In a Nutshell:

This is a score for those of you who live in or near Dalston; we imagine it’s just the kind of place you drop into after work of an evening (or, you know, anytime). Founder Bob said of the opening, ‘I’ve lived ten minutes away in Newington Green for almost a decade and Dalston has been such a big part of my life over that time. Sapling has been five years in the making and it’s been an amazing journey. I started with weekly tutored tastings at the Berry Bros’ Pickering Cellar, which then evolved into wine schools in Beaune, multiple wine exams, nearly two years of searching for the right site and then leaving my previous career at the end of 2016 to make Sapling happen.’
