Fodder at Borough Wines and Beers

Two ex-Fera chefs are in residence at Borough Wines and Beers in Islington for a month-long pop-up called Fodder.

Michael Thompson and Ollie Downey focus on wild, seasonal and locally sourced ingredients.

The Spot:

This is in Brewery Below, which is the events space and nano-brewery at Borough Wines and Beers’ Islington shop.

We love that all the plates here — made by local ceramicists — are available to purchase, meaning you can really own that whole dinner.

The Food:

Much of the food served at Fodder is foraged and definitely seasonal. Example dishes include lamb nuggets with rosehip ketchup and fermented turnip mayo, and Cornish cod poached in seaweed with sea vegetables, buttermilk and apple marigold.

There’s some careful sourcing of ingredients, with fish coming daily from Cornwall, honey from Hive & Keeper (a honey supplier that uses ancient techniques), and Article Number 25, who grow mushrooms using ground from London coffee shops that would otherwise have been chucked out.

The Drinks:

Borough Wines and Beers have designed the drinks menu, as you’d expect, with beers, wines and spirits on offer. The wines are mostly low-intervention, natural and organic wines.

The Damage:

Tickets cost £45 for a seven-course tasting menu (not including drinks).

In a Nutshell:

These guys have come from the kitchen at Fera, so they’ve got some serious experience. This is a great opportunity to try the food of two chefs who may go on to be big names.
