Cub

OPENED September 07th, 2017

Ryan Chetiyawardana (aka Mr Lyan) has teamed up with Doug McMaster of the zero-waste Silo restaurant in Brighton to launch Cub, a drinks-led dining experience in Hoxton.

At Cub, all the food and drink will be served from one long bar area, so there’s no kitchen, as such.

The Spot:

The room is set up a little like a chef’s table, with booths in front of the long bar/prep area that dominates the room.

There’s lots of recycled material, in keeping with the focus on sustainability and minimal waste, so table tops are made from recycled yoghurt pots, and pendant lights from paper mulch and cork.

The Food and Drinks:

If we didn’t trust Mr. Lyan, we’d be hearing all kinds of alarm bells right now. The menu promises to ‘break down the boundaries between food and drink’, which does sound a little like a case of concept over experience. We are reserving judgement entirely at this point however because this guy has got form.

The food and drinks will come out in courses, some of them food and drink together, some of them just one or the other.

The size of dishes will range from snacks, to appetisers and slightly larger dishes. Some example courses include Krug, water jelly, spiked herbs; compost smoked carrot, buffalo curds and whey; buttered Mr Lyan gin, precipitation of Lapsang Tannins, Ambergris, cider; and tea, tea stems and compressed plum.

With descriptions like that, this needs to be good.

The Damage:

The tasting menu is £45 and typically includes three drinks, four plates and off-menu tastes and snacks. An a la carte menu is also available for people who’d like a drink and a few plates. Plates range from £5-£12, and drinks from £5-£12.

In a Nutshell:

This is certainly a unique concept for London. Cub is aiming to challenge the traditional idea of a bar, and indeed a restaurant and we really hope that it works. We also hope there’s enough food coming over that bar to constitute dinner. Watch this space for our review…
