Brighton-born concept Baby Bao arrives in St James’s.

While Baby Bao is well established at The Pond pub in Brighton, they are testing London’s appetite for Taiwanese steamed buns with a pop-up in Haymarket.

The Spot:

But that isn’t to say this will be a short-lived romance. If all goes well, the pop-up site may become a permanent concept in Haymarket. Consider this a sign to eat as many pillowy buns as you possibly can…

Baby Bao - Baos

The Food:

Helmed by chef Adrian Geddes, buns are piled lavishly loaded with goodness like roast pork belly, peanuts and hoisin, cod tempura with pickled fennel and tartare sauce, or mushroom and miso mayonnaise – a favourite amongst vegetarians. Dessert is an absolute must, with bad but oh-so fun treats such as donut baos, deep-fried oreos, and malted milk cheesecake with miso caramel.

The Drinks:

This isn’t your average street food concept, serving up a strong line-up of killer cocktails. Try the Dixie Dragon (made with chilli and lemongrass-infused gin, lime, sugar and raspberry syrup) or The Lowdown (a Japanese whisky cocktail with barrelled Nikka, green tea syrup and bitters). If you prefer to pair your bun with a beer, Baby Bao has you covered with everything from pilsners and pale ales to stouts and saisons.

The Damage:

Buns cost no more than £7; drinks vary between £5 and £9.

In a Nutshell:

Baby Bao might specialize in soft steamed buns, we think their side dishes are just as worthy of a mention. Crispy fried nuggets of corn, gochujang mac and cheese or duck chips with kimchi – fingers crossed this place is here to stay.
