When friends, chef Trigg Brown and business partner, Josh Ku, took a trip to Taiwan, they were so inspired by the vibrant and constantly evolving cuisine that they decided to open up their own version in Williamsburg – Win Son. Their new joint, located on the corner of Graham and Montrose, is described as Taiwanese-American soul food, combining elements of authentically Taiwanese food with an experimental approach in a bid to improve an underserved market in New York.

Taiwan’s tumultuous history of colonisation by several countries and the Chinese Civil War, which led to more than 2 million people fleeing to the island has created one of the world’s richest, most diverse cuisines, famous for dishes like three-cup chicken, gua bao or pork buns to name a few. First time restauranteur, Josh Ku, whose family is Taiwanese, grew up on the cuisine in Long Island and further introduced it to partner and chef, Trigg Brown (previously of Upland) and, after trialling the idea through a few successful pop-ups, the brick-and-mortar version, Win Son, was born.

The menu is a mix of classic Taiwan dishes, adapted by Brown and originals inspired by the cuisine. Items include their Nutritious Sandwich (a popular Taiwanese sandwich of fried sweet dough with pineapple, ham and jalapeño), Pan-griddled Pork Buns (with scallions and chilli vinaigrette) and Beef Roll (with braised shank, scallion pancake and egg). The drinks menu offers up a few beers, wines, and cocktails like the Auntie Leah (gin, cherry amaro, Aperol, lemon, and lime) to accompany the food.
