OPENED

London welcomes a new hotel. But, this is no ordinary hotel, this is André Balazs new hotel, Chiltern Firehouse London opening in Marylebone. So yes, our fine city gets a bit of the man who brought The Mercer to New York, Chateau Marmont to Hollywood and Standard Hotels across the USA. 

Chiltern Firehouse London is housed in an old fire station in Marylebone, the hotel will swing open its doors next month. Till then, however, to whet our appetite for what’s to come, the restaurant is open for business. At the help of the kitchen is Nuno Mendes who has moved in from Viajante in Bethnal Green (and has worked with the likes of Wolfgang Puck) and Dale Osborne who joins from Heston Blumenthal’s Dinner. Need we say more? Well, don’t worry, we will. 

It’s Nuno’s sixteen years in the US that is evident throughout the menu. Oh yes, the menu. This comes with a warning: Do Not Read When Hungry. From snacks to kick off like crab-stuffed doughnuts, starters of fillets of squab breast  with grains, chicory and a trio of redcurrants, mains including a slow-roasted short rib with hazelnut purée and bone marrow is heavenly and nattily tricked out with leaves and flowers and finishing up with a pudding of frozen apple panna cotta with herb granite and dried meringue. The food has, in a city that seems to have gone crazy for American grub, nailed modern American cuisine with elegance, finesse and beauty. 

On the note of beauty, thanks to Studio KO, the decor is rather beautiful. Keeping original features from the original firehouse with large doors and high ceilings, the rest is lit by filament lightbulbs, brick tiles on the walls, wooden floors that spill over to tiled flooring and green velvet benches giving a very modern feel with traditional brasserie twists. 

Sure to be one of the most exciting openings of the month, we just can’t wait for the hotel to open now. Welcome to London, André.
